Use the best quality dark chocolate you can find. (50% - 60% cocoa content)
If you are using microwave for melting chocolate, be careful not to burn it.
It is absolutely okay for mud cakes to crack on top. You can level the cake before frosting using a serrated knife.
The cake will be soft when it is out of the oven. It will become firmer as it cools down. Let the cake cool in the pan for 30 mins.
Once cooled, cling wrap and store at room temperature. Refrigerate or freeze for later use.
ALWAYS bake this cake at least two days before the event. The flavour matures over time.
Frosting option: Simple dusting of icing sugar / Buttercream / Chocolate ganache.
