Gulkand or rose petals jam is one of my favorite jams. It is very good for health and is used in many ayurvedic medicines as it has cooling effect on the body. In India this jam is filled inside betel leaves and served after food. I hope you like it and give it a try.


1/2 kg organic roses/desi gulab

1 cup sugar

2 cardamoms

1 tbsp honey

1/2 tbsp fennel seeds

1 tbsp melon seeds

1 tbsp raisins


Separate petals from stems and remove impure petals if any.

Wash the petals thrice and dry it sun light till all the moisture is gone.

Now lightly pulse the petals in processor.

Now we will fill powdered sugar ,cardamom powder,crushed flower, melon seeds and fennel seeds in alternate layers in a sterilized bottle till it reaches to the top. Add honey in the last layer.

Now place this bottle sunlight for 14 days till water oozes out of the rose petals and the petals turn dark brown.
